Ingredients: 1 Tbsp olive oil 2 cups organic cremini mushrooms, sliced or quartered 1 cup onion, diced 3 cloves garlic, chopped 4 cups cauliflower rice 1/2 cup organic, free range chicken or vegetable stock 1 /4 cup organic feta cheese, crumbled 1 Tbsp fresh, organic thyme (or 1 tsp dried) 1 /2 tsp pink salt 1 /4 tsp ground black pepper Directions: In large skillet heat olive oil.
