Try this flavorful, OMG-yummy dip: Basil Pesto & Cauliflower Rice Dip

Servings: 2 cups

Ingredients

For the pesto:

4 cups fresh organic basil

1/2 cup organic walnuts

1/4 cup nutritional yeast

1/4 cup organic extra-virgin olive oil

2 tablespoons organic lemon juice

1/2 teaspoon Himalayan pink salt

1/4 teaspoon organic ground black pepper

For the cauliflower rice:

4 cups organic cauliflower rice

1/2 cup organic red onions (diced & optional)

1 tablespoon organic extra-virgin olive oil

2 cloves organic garlic ( freshly crushed)

1/2 teaspoon Himalayan pink salt

1/2 teaspoon organic ground black pepper

Steps:

Prepare the pesto:

Add all ingredients for the pesto to a Vitamix or food processor and blend until it is well combined and has a thick texture. (Pulsate blender)

-*Adjust seasonings to your preference. Set aside.

Prepare the cauliflower rice:

– Add all ingredients for the cauliflower rice to a skillet and lightly saute until the onions and cauliflower are soft.

– Add the pesto mixture to the skillet and stir until everything is well combined. Adjust seasonings to your preference.

– Transfer to your serving bowl(s) and is best served hot/warm with either almond flour tortilla chips or cassava chips.

*Store in an air-tight BPA-free container in the refrigerator.
